Beef Fajitas

Introduction & method

Fajitas are a comparatively recent invention - first made in the 1930s by Mexican cowboys in Texas using the beef they were given as part of their pay, and being commercialised from 1969 onwards. This is a really quick and easy recipe and it tastes great.

Beef Fajitas Recipe

Marinade the Beef


Crush/mince the garlic and mix it together with the other marinade ingredients in a shallow bowl. Cut any fat off the steak and lay it in the marinade. Turn it over to get it fully coated and set aside to marinate for 1-4 hours.

Cook the Fajita Filling


Before you start cooking, cut the peppers and onion into narrow strips. Heat some oil in a heavy-bottomed frying pan or skillet. When it's hot, add the steak and cook for 4 minutes each side. Remove from the pan and sit it on a warmed plate tented in foil until we're ready for it. Add some more oil to the pan, then sauté the onions for about 5 minutes. Add the peppers and remaining marinade and cook for 2-3 minutes more. Slice the steak into thin strips on the diagonal and return them to the pan for another minute.

Assemble the Fajitas


Warm the tortillas in the microwave for 30-60 seconds. To fill a tortilla you can either cup it in your hand or lay it flat on a plate. Spread with the hot fajita mix and top with the garnishes of your choice. Roll it up or fold it.

 450 grams steak - flank or skirt
 1 small onion
 3 small bell peppers, different colours
 1 tbsp olive oil
 6-8 flour tortillas
MARINADE
 80 ml lime juice
 60 ml olive oil
 2 cloves garlic
 1 tsp ground cumin
 1 tsp sea salt
 half a tsp ground black pepper
 half a tsp chilli powder
 a pinch of cayenne pepper
GARNISH
  soured cream
  shredded lettuce
  grated cheese
  guacamole
  pico de gallo
