Banana bread is ridiculously simple to make and it's the perfect way to use up those black bananas that you really don't want to eat.
Prep
You will need a 2 pound loaf tin for this, 24 x 14 x 7 cm (9½" x 5½" x 2¾"). Butter the inside and line it with greaseproof paper, leaving some overhanging so you can grip it to remove the cooked loaf. Preheat your oven to to 160°C (320°F) for a fan/convection oven, 180°C (356°F) conventional, gas 4. Mash the bananas with a fork.
Mix the Batter
In the bowl of a stand mixer, combine the flour, sugar and baking powder. Cut the softened butter into cubes, and add it with the eggs, milk and bananas. Mix it slowly for 3-4 minutes, tip the batter out into the loaf tin and flatten the top with a spatula. Place in the oven and bake for 50-60 minutes. Check for doneness by inserting a skewer into the centre. If it comes out clean, the cake is done. Tip it out onto a wire rack to cool.
