Hunter's Chicken

Introduction & method

Whenever I've had hunter's chicken in a pub, the chicken breast has always been dry and unpleasant. With my recipe, we have cheese inside and a wrapping of bacon outside to keep the chicken deliciously moist. Add more cheese on top and some barbecue sauce and you have a quick and tasty meal.

Make the Barbecue Sauce


Mix all the sauce ingredients together in a small saucepan. Heat until simmering, then set aside. When needed, heat the sauce gently.

Prep the Chicken


Preheat your oven to 180°C (356°F) for a fan oven, 200°C (392°F) conventional, gas 6. Grate half of the cheese. Make a slit along the centre of each breast, being careful not to cut all the way through. Spoon grated cheese into the cavity, and fold over the top flap. Wrap each chicken breast in three rashers of bacon. Put them on a wire rack over a roasting tray and pop them in the oven for 15 minutes. Remove from the oven and cover the tops with as much cheese as you can get to stick - it's probably easier if you slice the cheese for this element, rather than grate it. Return to the oven for another 10 minutes.

Remove from the oven and check the internal temperature - it should be at least 65°C (149°F). 

Serve the Hunter's Chicken


Smother the chicken with warm barbecue sauce and serve with mash (if you have any leftover cheese, you can add it to the mash) and green beans.

BARBECUE SAUCE
 120 grams tomato ketchup
 2 tbsp dark brown sugar
 2 tbsp Worcester sauce
 1 tbsp cider vinegar
 splash of hot sauce
 half a tsp garlic powder
 1 tsp smoked paprika
 1 tsp mustard
MEAT
 2 boneless, skinless chicken breasts
 6 rashers streaky bacon
 150 grams cheese

PLUS

For the hot sauce in the BBQ sauce, you can use sriracha, tabasco or whetever you like. The cheese can be all one kind, or a mixture of different ones, as long as they melt well.
