Christmas dinner pizza sounds weird - let's be honest, it IS weird - but it's very tasty and easy to put together, especially if you use a pre-made pizza base.
Macerate the cranberries
In a small saucepan, dissolve the sugar in the port over medium heat. Add the cranberries and cook them for a minute or two until they've all popped. Transfer to a small bowl and let them macerate for an hour or two - or overnight.
Make the pizza dough
Combine the flour, salt and yeast in the bowl of a stand mixer. Stir in the oil and water. Using the mixer's dough hook on medium speed, whizz the dough until it comes together in a ball. If you don't have a stand mixer, mix all the ingredients by hand, then knead the dough for 10 minutes. Rub the dough with oil, cover the bowl with plastic film, and put it somewhere warm until the dough has doubled in volume - this will probably take 1-2 hours.
Make the pizza base
Cut a sheet of greaseproof paper the same size as your pizza dish. Oil it well, then roll out the dough as thinly as you can on a floured worktop. Transfer to the greaseproof paper and stretch the dough out until it reaches the edge of the paper. Cover it with a clean tea-towel, and leave it somewhere warm for half an hour.
Assemble the pizza
Preheat your oven with the pizza dish in it to 210°C (410°F) for a fan oven, 230°C (446°F) conventional, gas 8. Divide the stuffing into 4 equal balls and squash them as flat as you can. Cut the cheese into small discs and brush them, the sprout leaves and sage leaves with oil. Mix the gravy and cream together, and then stir in the shedded turkey. Brush the rim of the pizza base with oil and spread the turkey sauce all over it in a thin layer. Arrange the stuffing and cheese discs alternately. Place a sage leaf on top of each piece of cheese, and arrange the sprout leaves in the spaces between everything else. Drain the cranberries and scatter them randomly.
Bake the pizza
Remove the hot pizza dish from the oven and slide the pizza onto it. Bake for 12-15 minutes.
