This insanely simple salad is the perfect combination of colour, flavour and texture, and takes almost no time to make.
Thinly slice the tomatoes and mozzarella and arrange alternating slices on a plate. Sprinkle with salt and pepper and scatter torn basil leaves all over. Drizzle olive oil all over and eat with fresh baguette and maybe some cold, crisp white wine. Unbelievably fab!
Salt and ground black pepper to season, extra virgin olive oil for drizzling
