Basic cheese on toast is a superb quick and easy tummy filler, but this slightly more elaborate version takes it to the next level. It really is The Best Cheese On Toast You'll Ever Have. And it's still quick, easy and cheap to make.

About the Ingredients


There's a fair bit of leeway here - you can use whatever kind of bread you like, but I think slices cut from a good quality white bloomer loaf are best. They should be 2-3cm thick (about an inch), as long as they'll fit in your toaster. The cheese - any strong melty cheese cut into slices by you, not a machine. The Parmesan - you can use grana padano - it's a bit cheaper. And the mustard, whatever kind you like - English, Dijon, even American!

Get Toasting


Cut a few very thin slices from the onion - just enough to have 4-5 slivers on each slice of toast. Heat your grill/broiler in the oven. Toast the bread in the toaster - depending on the size of your bread and the capacity of your toaster you may need to do this in batches. When the bread is nicely golden brown, spread one side generously with butter. Then spread with mustard and place slivers of onion over this. Add slices of cheddar, making sure they go right to the edge of the toast. Sprinkle on grated parmesan. Put all of the toast on a pizza tray or something similar and put it under the grill for probably about 5 minutes until the cheese is all melted and bubbling and starting to go brown in places.

 1 tbsp butter
