These sausage, cheese and bean slices (AKA melts, pasties, bakes) are a popular breakfast choice from bakers such as Gregg's (other bakeries are available). They are easy to make and very tasty, and you can use your favourite sausages and cheese.
Brown the Sausages
The first job is to gently cook the sausages in a little oil for a few minutes to get them lightly browned all over. When you've done this, remove them from the pan and set them aside.
Assemble
Unroll your pastry and cut it into three rectangles approximately 12cm by 24cm (4½ x 9 inches). In the bottom half of each rectangle, place one sausage on the left and one on the right, leaving a margin of 1cm (half an inch). Sprinkle some grated cheese in the gap between the sausages, then add a couple of tablespoons of beans, and then another sprinkling of cheese. Moisten the edges of the pastry with water then fold the top half of it down over the filling. Press the top and bottom edges together then make indentations with a fork. Whisk together the egg and milk and paint the slices with it. Using a sharp knife, make diagonal scores about 1 cm apart. Be careful not to cut all the way through the pastry.
Bake
Heat your oven to 180° Celsius (356° Fahrenheit) for a fan/convection/airfryer oven, or 200° Celsius (392° Fahrenheit) for a conventonal one, or gas 6. Place the slices on a baking sheet lined with greaseproof paper and bake until golden-brown, about 30 minutes
