If you find anything named 'pudding rice', use that. Otherwise use arborio (risotto) or paella (bomba) rice.

Cook the rice pudding


Butter the inside of a large ovenproof casserole dish. Pour the rice, sugar and sultanas/raisins in. Stir in the milk and evaporated milk. Grate the whole nutmeg on the top, then dot with the remaining butter.

Heat your oven to 130° Celsius (266° Fahrenheit) for a fan/convection/airfryer oven, or 150° Celsius (302° Fahrenheit) for a conventional one, or gas 2. Put the casserole dish in, uncovered, on the middle shelf. Bake for 2 hours and 15 minutes. Eat.
