Tzatziki is one of those Greek things that always seems to find its way onto the table along with hummus, taramasalata and other little dippy treats. It's crazily easy to make from only 3 or 4 ingredients.
Strain the Yogurt
Even if you're using Greek yogurt, which has already been strained, you can always squeeze a bit more water out of it. Place a square of muslin (cheesecloth) in a bowl and tip the yogurt into the centre of it. Tie up the corners and hang the bundle from something - I have high-level cupboards in my kitchen, so the handles are useful for hanging things off. Place the bowl underneath to catch the drips. You can leave it dripping for as long as you like, but you might want to squeeze it a bit to hurry things along.
Prep the Cuke
Cucumbers are packed with water and your job is to get rid of it. Cut your cucumber in half lengthways. Scoop out the seeds with a teaspoon. Grate the remaining cucumber into a fine seive over a bowl. Press out as much water as you can with the back of a spoon.
Make the Tzatziki
I think mint is probably the most common herb used in tzatziki, but dill, parsley and thyme are also used. Choose whatever you like. If fresh, chop it finely and stir it into the tzatziki. Give it a taste and add salt if necessary. Serve with a sprig of mint and a quarter lemon.
