Many savoury dishes benefit from the moisture provided by gravy. But if you are not cooking a roast with its delicious juices, this a great way to make a really tasty gravy.
Peel the onion and chop it in half. Slice thinly and fry in vegetable oil over medium heat for about 30 minutes, until nicely browned all over. Take your time over this and don't let them burn. Dissolve the stock cubes in the boiling water. When the onions are caramelized, sift in some of the flour, stir until well mixed in, repeat until you have a thickish mixture. Then pour in the stock and stir well. Bring to the boil, add the pepper and some salt if needed. And that's it, onion gravy!
