
These cookies are quick and easy to make and they taste absolutely awesome.
In a small saucepan over low heat, melt the butter. Mix the brown and white sugars together in a large bowl, then stir in the melted butter. Whisk vigorously until the sugars are dissolved. Now add the whole egg, the egg yolk and the vanilla. Keep on whisking until the mixture is light and creamy. Now mix in the flour and bicarb. The dough will be quite stiff but don't give up. Finally, mix in the chocolate chips and get them as evenly distributed as you can.
Heat your oven to 150° Celsius (302° Fahrenheit) for a fan/convection/airfryer oven, or 170° Celsius (332° Fahrenheit) for a conventional one, or gas 3. Line one or two (depending on the size of your oven) baking sheets with greaseproof paper. Using a US quarter-cup measure (60ml) divide the dough into equal-sized discs. They will be a lot thicker than you need them, but don't worry - they'll flatten out as they cook. Place the pieces of dough on your trays and bake for 15 minutes. Let them cool and firm up for a few minutes after baking, then transfer them to a wire rack to cool completely.
