Tea Smoked Salmon
Tea smoking is a brilliant way to cook fish (and other things) - very quick and very tasty. You can do tea smoking in a wok with a lid, or improvise with a big saucepan, a colander, and a lid.

Buffalo Wings
Buffalo wings are an American institution. They were invented in the mid 1960s at the Anchor Bar in Buffalo, New York, hence the name. Nothing to do with large woolly beasties at all. It's hard to imagine a world without buffalo wings - they are simple, delicious, and totally addictive. And very easy to make.

Croissants
Very few things can beat a freshly-baked croissant, but unless you live near a French bakery (in France), you are unlikely to ever get one. Too often, the things served in cafés are soggy and doughy, not the rolls of shatteringly crispy, light and flaky pastry that they should be. Do not despair, you can make your own croissants. I wouldn't claim it is easy or quick, but it is immensely satisfying when you manage it!

Russian Salad
Russian salad is a combination of simple ingredients - vegetables, tuna and boiled eggs - coated in mayonnaise. Very easy to make, and very tasty.

Lemon Posset
Posset is a very old dish, although it has transformed over the centuries from a kind of curdled drink made from wine and cream (yuck!) into a delicious dessert of cream and lemon juice. It has become very fashionable lately, and it's really easy to make.

Chicken Soup
You don't have to have a Jewish mother to enjoy brilliant chicken soup. Most cultures the world over have a version of chicken soup. It's easy to make, nutritious and delicious.

Chip Shop Curry Sauce
Chip shop curry sauce is a uniquely British thing - it's a pale imitation of the rich gravies that we know and love from the Indian sub-continent. It's quick and easy to make, and delicious poured over chips.

Mac and Cheese
Mac and cheese, or macaroni cheese, is probably one of the greatest comfort foods ever invented. Pasta, cheese sauce, and cheese on top. It's just fabulous. This is a slightly fancy version using three types of cheese, and bacon,but you could just as well do a simple version with just one cheese. It's actually a very old dish, being mentioned in 14th Century cookbooks.

Kedgeree
Kedgeree was invented when the British occupied India. It was very popular at the breakfast table, but is also suitable for lunch and dinner. The kedgeree recipe is a simple concoction of rice and fish with a smidgeon of curry powder, served with hard-boiled eggs on top. It is based on the Indian khichdi or khichri.

Torrijas Spanish Bread Pudding
Easter is a big thing in Spain, and one thing the Spanish love to eat around this time is torrijas. Torrijas are similar to French toast, pain perdu and bread and butter pudding. Torrijas are very simple to make and they taste delicious.

Lemon Drizzle Cake
Lemon Drizzle Cake is really easy to make, and pulsates with lemon flavour. It's very hard not to love.

Pan con Tomate - Toast with Tomato
This amazingly simple breakfast - nothing more than toasted bread, olive oil and tomato pulp - is very common in Spain, but originated in Andalucia in the south. It's really quick and easy to make, and tastes delicious. Probably healthy too.

Ceviche
Ceviche is a raw fish salad, the fish being cured in lime juice. It's quick and easy to make, and absolutely delicious. Most countries in Central and South America have their own versions of ceviche, but this is the classic ceviche from Peru.

Carrot Cake
If you've never had carrot cake before, you might find it odd that it centres around an apparently savoury vegetable. But in fact, carrots are the second sweetest vegetable around, after sugar beet. Add to that a thick cream-cheese-based icing, and this is an irresistible cake.

Guacamole
Guacamole, the dull green flavourless dip you inevitably get with Mexican / Tex Mex meals, has always been a disappointment to me. I always had to ask myself 'why? I mean WHY?'. Because it was rubbish, there nothing attractive about it at all. And then I started making my own, using this guacamole recipe. And now I know why anyone would bother to eat guacamole: if it's made right, it's delicious. And very quick and easy to make.

Chicken Kiev
Back in the 1970s and 80s, when Britain was discovering a whole new world of cuisine, chicken Kievs were on the menu of every restaurant that thought itself the slightest bit sophisticated. Sadly, you almost never see them now (although I suspect you can still buy rubbishy frozen ones). But do not despair - you can make them yourself, it's not really difficult, and they will be the best chicken Kievs you've ever had.
