Greek Salad - Horiatiki

Introduction & method

This simple salad is wonderful on a hot summer day. Tomato, cucumber, red onion, olivs and feta cheese. Incredibly simple and tasty.

Make the dressing


Peel and crush the garlic and mix with the other ingredients in a screwtop jar. Set aside until needed.

Prep the cheese


Sometimes feta comes in oil with some oregano on the outside. If yours doesn't, just mix some EVOO and oregano together and coat your cheese with it. Note, in Greece the cheese would be served as a large slab on top of the salad. Here in the UK we're more used to it being broken into chunks and mixed in with the veggies - it's up to you how you want to do it.

Prep the salad


Peel the onion, cut it in half, then thinly slice it into half-moons. Wash the cucumber, cut it in half lengthways and scoop out the seeds with a teaspoon. Cut the cuke into small dice. Cut the tomatoes into small dice. It's best to leave the olives whole with their stone in. If you are using green bell pepper, cut it into small pieces. Mix the dressing in with the veggies, place the cheese on top and sprinkle with capers. Serve with some crunchy bread to soak up the dressing.

 3 large vine tomatoes
 1 cucumber
 1 small red onion
 200 grams feta cheese
 150 grams kalamata olives
 half a medium green bell pepper (optional)
 1 tsp capers
DRESSING
 6 tbsp extra virgin olive oil
 3 tbsp red wine vinegar
 1 clove garlic
 1 tsp oregano

EVOO and oregano for the cheese
