Cowboy Pie

Introduction & method

I was told this is a popular school dinners dish, but it must be a new-fangled one (like, in the last 40 years) because I'd never had it before. Cowboy pie is proper quick, easy and cheap comfort food - sausages and baked beans topped with cheesy mashed potato. Sometimes, bacon, corned beef, spam or minced beef are used alongside or instead of the sausages.

Make the Mashed Potato


Peel the potatoes and cut them into evenly-sized chunks. Cover them with salted water in a large pan and bring it to the boil. When boiling, turn the heat down to a simmer, put a lid on the pan and cook for 10-15 minutes until the potatoes are tender. Drain the water off and put them back in the pan. Now mash them or (my favourite way) put them through a potato ricer. Whip the mash together with salt, white pepper, a knob of butter and 2-3 tbsps milk.

Make the Sausage and Bean Filling


Heat your oven to 180°C (356°F) for a fan/convection oven, 200°C (392°F) conventional, gas 6. Peel and finely dice the onion. Heat some oil in a large frying pan on medium-low heat. Cook the onions for about 5 minutes until softened but not overly browned. Cut your sausages into three pieces, add them to pan and stir them around to get them browned all over. Mix in the baked beans and the BBQ sauce.

Assemble and Bake


Pour the filling into an ovenproof casserole dish and spread the mashed potato in an even layer over that. Cover the top with grated cheese and bake for 35 minutes.
