Shop-bought coleslaw can be bland and insipid, but this recipe is packed with flavour and crunch. And it's even better if you make your own mayonnaise!
Prep the Veg
Top and tail the carrot. Skin it if you want, then grate it. For the cabbage, remove any grotty outer leaves then cut it into narrow ribbons about 3mm wide, then cut the ribbons into 1cm lengths. Alternatively, you might have a food processor with a magical shredding attachment, and I would highly recommend using that. Top and tail, peel and finely chop the onion.
Mixy Mixy
In a large bowl, mix the veggies and then stir in the mayonnaise, making sure all the veggies are coated all over. Season with salt and white pepper to taste. If you want to cut out a few calories, you might mix 50% natural yoghurt in with your mayonnaise.
