Chilli Potato Bake

Introduction & method

This dish features a basic British-style chilli con carne sauce - it's very mild and has nothing much to do with American versions. The chilli is layered with sliced potato, topped with cheese and is pure comfort food.

Chilli Potato Bake Recipe


Peel and dice the onion, finely dice the celery and grate the carrot. Finely chop the coriander. If you're using any leftover meat, chop it finely.

Make Chilli Con Carne

Heat some oil in a large frying pan and sauté the onion gently for about 5 minutes. Add the celery and carrot and cook for another 5 minutes. Now turn up the heat, add the minced beef - break it up with a spatula and turn it frequently to get it browned all over. Add the stock, tomatoes, beans, chopped coriander and cumin. Throw in any pre-cooked meat you are using. Cook for about 10 minutes then taste it and add chilli powder and salt to taste. You can cook the chilli a day ahead to let the flavours really develop.

Cook the Potatoes

You don't need to fully peel the potatoes, just cut out any eyes and scabby bits then slice finely - about 3mm. A mandoline is perfect for slicing the spuds but be careful with it and always use the guard. Place the potatoes in a pan of salted water. Bring it to the boil and simmer for about 10 minutes until the potatoes are just cooked. Drain the pot and let the potato slices steam dry and cool down a bit.

Assemble and Bake the Casserole

Heat your oven to 180°C (356°F) for a fan/convection oven or airfryer, 200°C (392°F) conventional, gas 6. Find an ovenproof baking dish or casserole. Cover the bottom with a layer of chilli con carne - about one-third of it. Arrange half of the potatoes in a single layer, then another layer of chilli, the rest of the potatoes and the remaining chilli. Cover with breadcrumbs and grated cheese. Place in the oven or airfryer and bake for 25 minutes until the top is bubbling and golden.

Ingredients & Info

 500 grams minced beef
 200 grams leftover cooked pork or beef (optional)
 400 grams canned chopped tomatoes
 400 grams canned mixed beans
 1 medium onion
 1 small carrot
 1 stick of celery
 1 tsp ground cumin
 1 tsp mild chilli powder
 1 tsp salt
 small handful of fresh coriander
 500 grams potatoes
 3 tbsp coarse breadcrumbs
 75 grams grated cheese


For the canned beans you can use red kidney beans if you like, but I prefer a mixture and the brand I buy comes in a slightly spicy tomato sauce. You'll need some oil for sautéeing.
