
In a restaurant or takeaway, the meat for a gyro would be cooked on a vertical rotisserie, like a döner kebab. But you can still make a very convincing version of gyros at home without that. And you must make the tzatziki using the Greek method shown here - it's nothing short of brilliant!

4-5 chicken thighs
1 tbsp ground coriander
2 tsp smoked paprika
1 tsp mild chilli powder
small clove of garlic
1 tbsp dried thyme
zest of 1 lemon
juice of half a lemon
60 ml olive oil
salt and pepper to taste
1 cucumber
300 grams Greek yoghurt
small clove of garlic
3 tbsp white wine vinegar
2 tbsp olive oil
salt and pepper to taste
small handful of fresh dill
375 grams plain white flour
240 ml lukewarm water
2 tsp instant dried yeast
1 tbsp olive oil
1 tbsp sugar
1 tsp salt1 large potato and 2 bamboo skewers to assemble the meat stack. Sliced red onion, tomato and shredded lettuce to serve.
