
The balti style of of curry was invented in Birmingham and became very popular in the 80s and 90s. And then somebody had the brilliant idea of putting balti curry into a pie. Balti pies are massively popular at football matches and elsewhere.

350 grams plain white (all-purpose) flour
85 grams butter
85 grams lard
1 tsp salt
about 1 cup water
450 grams boneless chicken thigh or breast
1 large onion
2-3 large tomatoes
1 tbsp tomato puree
4 tbsp rapeseed oil
2 cms ginger
3 cloves garlic
1 tsp chilli powder
half a tsp turmeric
half a tsp curry powder
half a tsp garam masala
half a tsp coriander powder
2 tsp chopped fenugreek leaves
2 tsp chopped fresh coriander (cilantro)
salt to tasteTo glaze the pies, 1 egg and a splash of milk. Optional decoration for the pies - a teaspoon of cumin seeds.
