Bread and Butter Pudding

Introduction & method

This traditional British dessert is a brilliant way to use up stale bread. With the addition of dried fruit and custard, the bread is transformed into something magical.

Bread and Butter Pudding Recipe

Prep the Bread

Generously butter one side of each slice of bread and cut it into triangles - you may remove the crusts if you wish. Butter the inside of an ovenproof baking/casserole dish.

Assemble the Pudding

Arrange about half of the bread in a single layer on the bottom of the dish - overlap the triangles slightly. Sprinkle with half of the dried fruit and some nutmeg. Add a second layer of bread, fruit and nutmeg, but save 4-6 bread triangles to go on the top. Arrange the saved triangles on top, not overlapping but a bit artistically, and try not to have any dried fruit exposed - when baked these would turn into inedible little bullets.

Make the Custard

Mix together the milk and cream in a pan and heat them until not quite boiling. Whisk together the eggs and sugar. Add the milk/cream mixture and the vanilla essence and stir well. Pour this custard mixture over the bread and butter, making sure you fill all the cavities. Press the bread down so it all gets moistened. Sprinkle a tablespoon or two of demerara sugar over the top. Let the pudding stand while you preheat your oven to 160°C (320 °F) for a fan oven, 180°C (365 °F) for a conventional one.

Bake and Serve

Pop the pudding in the oven for 40 minutes. Serve on its own, hot or cold, or with pouring custard or whipped cream and marvel at how something as simple as stale bread can taste so good.

 200 ml milk
 100 ml double (heavy) cream
 3 tbsp demerara sugar
 60 grams sultanas
 sprinkle of ground nutmeg
 splash of vanilla essence
