Russian salad is a combination of simple ingredients - vegetables, tuna and boiled eggs - coated in mayonnaise. Very easy to make, and very tasty.
Peel and dice the potato and carrot. Place in a pan of boiling salted water and cook until tender, about 10 minutes. Be careful not to overcook the potatoes. After about 6 minutes, add the frozen peas. Place the eggs into a small saucepan and add just enough cold water to cover them. Add the salt and bicarb. Bring to the boil, then cover and remove from heat. Let stand for 10 minutes. When the vegetables and eggs are cooked, put them into a bowl of iced water.
When the potato, carrot and peas are cool, strain them and put into a salad bowl. Peel the eggs and chop into eighths, finely chop the dill and add them to the salad bowl. Add the tuna and the olives and stir well. Now stir in the mayonnaise, making sure everything is well coated.
You could also stir in some finely chopped dill pickle to give the salad a bit more zing.
Half teaspoon of salt and bicarbonate of soda (baking soda) to boil the eggs. Water for boiling.
