• 400 grams minced beef or pork, or a mixture• 1 medium onion• 2 carrots• 2 sticks celery• 125 ml red wine• 125 ml milk• 100 ml tomato passata• 50 grams unsalted butterPLUSSalt and pepper to taste. You can use tomato puree instead of passata - just use half the quantity. And you can use pancetta or gianciale instead of bacon.

Prep time: 15 minutes.
Cooking time: 4 hours.
