VEGAN PULLED JACKFRUIT SANDWICH

Introduction & method

Jackfruit is a very large fruit, similar to durian, that grows in south-east Asia. It was largely ignored until 5-10 years ago when people in the west realised its fibrous texture would be a good substitute for pork or chicken in vegan cookery. Cans of the unripe young fruit are now easily available in supermarkets. This sandwich is obviously a vegan version of pulled pork, and it's very hard to tell the difference in taste and texture between this and the pork version.

Vegan Pulled Jackfruit Sandwich Recipe

Make the Pulled Jackfruit and Sauce


Peel, slice and dice the onion. Heat the oil on medium-low heat and gently cook the onions for about 5 minutes - you want them soft but not browned. Add the cumin seeds and chilli flakes - cook for a couple of minutes until they release their aroma, then add the ground cinnamon and smoke powder and cook for a minute more. Now add the vinegar, tomato puree and BBQ sauce, Drain the jackfruit and add it to the pan. Add enough water to cover everything. Stir well, bring to the boil, then turn down to a simmer. Put a lid on the pan and let it cook for 30 minutes - check it every now and again to make sure it isn't drying out and add a bit more water if it is. After 30 minutes, remove the lid and taste the sauce. Make any adjustments you feel are necessary. Now you want to carefully reduce the sauce so that the jackfruit is all coated but the sauce isn't runny. When this is done, transfer it to a shallow vessel (a frying pan or plate) and tear the jackfruit apart with two forks.

Assemble the Sandwich


Cut the buns in half horizontally and lightly toast them. Dribble some tomato ketchup on the base. Scatter some shredded lettuce or rocket over this, then a big pile of pulled jackfruit, some coleslaw, a couple of slices of tomato, and the lid.

•  250 grams (drained weight) can young jackfruit in water
•  2 tbsp barbeque sauce
•  2 tbsp tomato puree
•  1 medium red onion
•  1 tbsp vegetable oil
•  1 tbsp cider vinegar
•  1 tsp cumin seeds
•  1 tsp ground cinnamon
•  1 tsp smoke powder
•  ΒΌ tsp chilli flakes

PLUS
4-6 bread rolls or English muffins, tomato ketchup, BBQ sauce, coleslaw, sliced tomato, thinly sliced red onion.
