No-Yeast Pizza Dough

Introduction & method

If you find yourself wanting to make pizza but don't have any yeast or the time to wait for it to prove, try this amazing recipe for no-yeast pizza. It's only self-raising flour and Greek yoghurt. It doesn't give you the complex chewiness and flavour of a slowly-risen yeast dough, but it's perfectly acceptable for a very quick pizza.

Mix the Dough

I'll be honest (aren't I always?) - this is only easy if you have an electric mixer, preferably a stand one. I suppose it's theoretically possible to mix your dough by hand, but it's going to very sticky, messy and frustrating. So, put your flour and yoghurt in the bowl of your stand mixer, and mix for a few minutes with the paddle attachment. Then switch to the dough hook, and knead it with that for 5 minutes. Now cover the bowl and place it in the fridge to rest the dough for 30 minutes.

Make and Bake Your Pizzas

Heat your oven to 210°C (410°F), for a fan oven, that's 230°C (446°F) conventional, gas 8. On a floured worktop, roll out your dough to the same size as your pizza tray, paint the top and edges with Extra Virgin Olive Oil, and arrange the fillings of your choice all over the top. Bake for 10-12 minutes.
